Cozy fall slow-cooked food! Is there anything better on a cool fall night than coming home and dinner is ready? The house smells good and you feel good knowing that there are just a few quick steps before dinner is on the table. Slow Cooker White Chicken Chili – doesn’t that sound perfect to come home to? White chicken chili is a slightly different than traditional beef chili and is a great dish to switch things up at dinner. This chicken chili has no oil in it or added fat, so it’s pretty healthy as well as delicious!
I had meetings the day I was planning on making this, so I did all the prep the night before. In the morning, I could just dump everything in the slow cooker on the way out the door. I’ve given directions for make-ahead, as well as the same-day version. While this looks like a long list of ingredients, you probably have most of them already in your pantry.
This “Dinner While You Work” recipe is modified from a recipe that I saw on Tasting Table. This is a recipe you will want to PIN; it was a huge favourite with TravelFoodCool tasters!

Prep time: 15 minutes; Cook time: 6+ hours; Serves: 6 – 8 people
What you need:
- 2 lb boneless, skinless chicken thighs (or breasts)
- 1 tbsp chipotle powder (you can also use chili powder)
- 1 tbsp cumin
- 1 tsp coriander powder
- 2 tsp salt
- 1/2 tsp Mexican oregano (or plain oregano)
- 2 – 19 oz (540 ml) cans of white kidney (cannellini) beans, drained (not rinsed)
- 1 onion, diced
- 2 cloves garlic, diced
- 2 medium jalapeños, finely chopped (spice wimps, this is not spicy; if you want it hotter, add 1 -2 more jalapeños or extra hot sauce at the end)
- 1 – 12 oz (341 ml) can of corn, drained
- 2 – 127 ml cans green chilies
- 4 cups chicken stock
- 1/2 tsp fresh ground black pepper
- 1 lime, juiced
- lime wedges, diced avocado, sour cream, grated cheese, pickled onions, cilantro, pickled jalapeños (garnish)
What you do (make ahead version):
- Mix together the chipotle powder, cumin, oregano, coriander and salt
- Rub chicken thighs (breasts) with the spice mix
- cover and place in fridge
- In a large ziplock bag, add one can of the drained cannellini beans, seal bag and crush (you can use a rolling pin or the other can of beans)
- Add the second drained can of cannellini beans to the bag, corn, green chilis, onions, garlic, jalapeños and ground pepper and place in fridge
- The next morning, put the chicken in your slow cooker
- Add the contents of the beans/corn/chilies etc bag to the slow cooker
What you do (same day version):
- Mix together the chipotle powder, cumin, oregano, coriander and salt
- Rub chicken thighs (breasts) with the spice mix
- Add one can of the cannellini beans to your slow cooker and then mash with a potato masher
- Add the spiced, rubbed chicken
- Add the second drained can of cannellini beans to the slow cooker
- Add the corn, green chilis, onions, garlic, jalapeños and ground pepper
What you do (both versions):
- at this point, beans, chicken, corn, green chilies, onions, garlic, jalapeños and ground pepper are all in the slow cooker
- Add the chicken stock
- Stir
- Cook on low for 6+ hours (I cooked mine for 8 hours)
- Remove the chicken, place in a large bowl and shred
- Return the shredded chicken to the slow cooker
- Stir
- Stir in lime juice
- Adjust salt and pepper to taste
- Serve
- Garnish with diced avocado, sour cream, grated cheese, pickled onions, lime wedges, pickled jalapeños, extra hot sauce, cilantro and buns
- Enjoy!
