Let’s be honest, when the weather gets cooler (or just cold), is there anyone out there who doesn’t want to curl up with a dinner of comfort food? You know, those dinners that just make you feel so good and happy! And yes, usually contain pasta. I don’t know if I’ve ever heard anyone say “Oh, this day was so cold and crappy, I just want a big salad” (sorry, but true!). This is one of those great Quick Comfort Dinners. It’s dead easy to make, pulls together really fast and tastes so good. 

This is a dinner I’ve made for the olive picking group. It’s fast to make and really hits the spot when you are working outside all day!

Prep time: 10 minutes; Cook time: 15 minutes; Serves: 4

What you need:

  • 1 lb sausage, de-cased (I used hot Italian sausage)
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 package (500g) gnocchi (I used mini gnocchi)
  • 1 bunch broccolini (I used one 6 oz pack, and would double it next time), chopped into small pieces
  • 1/2 tsp My Go-To Spice Mix
  • 2/3 cup chicken stock
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/2 cup grated Parmigiano-Reggiano cheese (not shown) + extra for serving
  • 1/4 cup chopped parsley

What you do:

  • Set a large pot with salted water on high to boil, when boiling add the gnocchi and cook until the gnocchi floats (about 3 – 4 minutes), then drain and set aside
  • In a large pan over medium-high heat, add the olive oil
  • Add the sausage, and stir, breaking it up, cook approximately 4 minutes

  • Add the onion and garlic, stir until cooked, about 2 minutes
  • Add My Go-To Spice Mix, salt and pepper and stir, cook about 20 seconds

  • Add the chopped broccolini, stir, cooking for a few minutes until slightly soft

  • Add the chicken stock, stir, make sure you scrape up all the brown bits on the bottom of the pan

  • Add the gnocchi, stir and cook about 2 minutes

  • Add the grated Parmigiano-Reggiano, stir

A really quick bowl of yum for those days you need comfort food!

Ingredients
