Let’s be honest, when the weather gets cooler (or just cold), is there anyone out there who doesn’t want to curl up with a dinner of comfort food? You know, those dinners that just make you feel so good and happy! And yes, usually contain pasta. I don’t know if I’ve ever heard anyone say “Oh, this day was so cold and crappy, I just want a big salad” (sorry, but true!). This is one of those great Quick Comfort Dinners. It’s dead easy to make, pulls together really fast and tastes so good.
This is a dinner I’ve made for the olive picking group. It’s fast to make and really hits the spot when you are working outside all day!
A shout-out to Pure Wow for giving me the inspiration and base for this recipe. If you are on a comfort food roll, check out this post from a few weeks ago for Instant Pot Chicken Chili Mac and Cheese, here.
