After the winter we had in Toronto, I swore I would not complain about the heat this summer. Italian summers can get pretty hot, especially if you’re walking around Rome or Florence. If you’ve ever been to Italy on a hot summer day, chances are you have tried granita. It’s an almost slushy-like ice fruit product that is cool and refreshing.
Here is a very fast and simple way to bring the taste of Italy home. This easy recipe has very little prep time and is a make-ahead dessert. Feel like being a little fancy? You can serve this as an elegant little palate cleanser between courses! Fine dining at home! Company coming? This recipe can easily be doubled (use a 9″ x 13″ baking pan to freeze). This is a great dessert for guests who are vegetarian, vegan, celiac or following a gluten-free diet.
As most of you know, I love the tangy zip of ginger, so no one is more excited than I am that the LCBO is finally carrying Giffard Ginger of the Indies. To celebrate, I decided to create a little Pineapple Ginger Mint Granita. The flavours of the pineapple and ginger play well together and the ginger definitely balances the sweetness of the pineapple.

Prep time: 5 minutes; Chill time: 2 -3 hours; Serves: 4-6
What you need:
- one 14 oz can crushed pineapple
- 2 tbsp Giffard Ginger of the Indies
- 1 tsp freshly grated ginger
- 8 mint leaves
- 1/2 cup water
What you do:
- In a blender, add the entire can of crushed pineapple (juice and fruit), Ginger of the Indies, grated ginger, mint and water
- Puree
- Pour into an 8″ x 8″ square baking dish
- Put in the freezer for 2 – 3 hours
- Remove from the freezer, scrape up with a fork
- Serve with a mint leaf garnish
- Enjoy!
