There is nothing more comforting than meatloaf. I know some people may disagree with me, but I’m betting there are a lot of people nodding their heads, yes! right now. Meatloaf is one of those incredible foods that gives you a flashback to childhood. It’s a fall comfort food that you want to eat when the weather is lousy or when you’ve had a bad day.
I’m a big fan of mini anything. I love smaller-portioned items that make it easier for dinner for 1 or 2 or many. This mini meatloaf recipe is simple. I pretty much guarantee that you have everything it takes to make this in your pantry and that all you have to do is buy the meat. This is a fun weekday meal as you can make it quickly. Students, this one is good to make for dinner and for leftovers.
Cooking for 1 or 2? The extras can be frozen or sliced up for sandwiches the next day!
Parents, this is a great recipe to make with your kids. Kids love to help by squishing the ingredients together!
Prep time: 15 minutes; Cook time: 30 – 35 minutes; Serves: 4 – 6 people
What you need:
- 1 lb lean ground beef
- 1/2 lb ground pork (you can use all beef if you prefer)
- 1 cup breadcrumbs
- 1 small onion, grated (1/4 cup)
- 1 garlic clove, minced
- 1 tablespoon Worcestershire sauce
- 1 ½ tbsp Dijon mustard
- 1 egg, beaten (with milk, below)
- 1/2 cup milk (beat with egg, above)
- 2 tbsp. steak spice or steak rub
- ½ teaspoon salt
- ¼ teaspoon pepper
- ¼ + ½ cup ketchup, chili sauce, steak sauce or barbecue sauce
What you do:
- Heat oven to 350°F
- In a bowl, add ground beef, ground pork, mix together
- Add breadcrumbs, grated onion, minced garlic
- Add Worcestershire Sauce, Dijon mustard, egg-milk mixture
- Add steak spice, salt, pepper and 1/4 cup ketchup, chili sauce or barbecue sauce
- Mix well (use your hands, it’s a little messy, but will give you the best mix!)
- Spray your muffin tin with non-stick spray
- Divide the meatloaf mix into 10 – 12 servings (mine made 10)
- Drizzle with remaining ½ cup of ketchup, chili sauce or barbecue sauce (I ran out of ketchup, so I did five ketchup-topped and five topped with HP Steak Sauce – tasters liked the HP-topped mini meatloaves and really liked the ketchup-topped ones)
- Since I had 10 mini meatloaves, I filled the extra two muffin spaces with water
- Bake in oven approximately 30 – 35 minutes
- Serve
- Enjoy!
- Leftovers can be rebooted for sandwiches or frozen
