Are you looking for a simple chicken recipe that is a snap to prepare and can be grilled in 10 minutes? I like to BBQ, especially on these late summer/early autumn evenings. This recipe for Garlic Lemon Chicken Thighs is one of my back-pocket, not-a-lot-of-time-needed, go-to recipes.
It is so easy to make and using the BBQ means little cleanup. This Garlic Lemon Chicken is so easy to prepare, I actually hesitated posting this recipe, but then one of my friends and TravelFoodCool readers told me that super simple recipes are exactly what she’s looking for!
Back-to-school students, here is one that you can make in a larger quantity and use throughout the week for sandwiches, salads and easy-to-grab meals.
Hosting a large group of people? No problem! This recipe can be doubled or tripled for large groups.
Prep time: 5 minutes; Cook time: 10 minutes and 1+ hour marinating time; Serves: 4 – 6 people
What you need:
- 1 kg (2.2 lbs) boneless, skinless chicken thighs (roughly 12 pieces)
- 1/3 cup lemon juice (this is the juice of one lemon)
- 1/2 cup olive oil
- 4 cloves garlic, minced
- 1 tsp dried thyme
- 1 tbsp Mrs. Dash Original
What you do:
- In a large ziplock bag, combine the lemon juice, olive oil, garlic, thyme and Mrs. Dash
- Shake the ingredients and mix well
- Add the chicken thighs, seal and squish marinade around to coat
- Place in the refrigerator for 1 hour or more (can be in the morning for that evening)
- Turn your BBQ on to high and when BBQ reaches 500F place marinated thighs on the grill
- Cook approximately 5 minutes, then flip over
- Cook for another 5 minutes (check for doneness)
- Serve
