Can you think of one thing that says Halloween more than a pumpkin? (I’ll wait.) That gorgeous orange globe, carved up and glowing with a light inside it welcomes you and says “Knock on my door”. Who doesn’t love a carved Halloween pumpkin?

There’s more than one reason to love pumpkins between the last week of October and the end of November. Do you know that two days (October 26) from now it’s National Pumpkin Day? (Sorry, you still have to go to work.) In the next few weeks, we not only get to celebrate National Pumpkin Day (October 26) and Halloween (October 31), but also  American Thanksgiving (third Thursday in November). How’s that for a pumpkin lovefest?

In honour of this trifecta of celebrations, Grayce and I have teamed with Staub Canada to shower some love on the pumpkin with a series of pumpkin-based recipes. 

Halloween is next week. I bet that there will be a lot of parties and parents who will be trying to get their kids to eat something before they head out the door. With this in mind, we have a super-simple recipe that comes together with very little prep and is ready for dinner in no time! This is a warm filling soup that is a good “in-a-hurry” meal. Leftovers are great for next day lunch.

Feeding a larger crowd? This recipe is a snap to double.

Prep time: 3 minutes; Cook time: 20 minutes; Serves: 8+

What you need:

  • one 796 ml can pumpkin puree
  • 5 cups stock (chicken or vegetable)
  • 1 cup 35% whipping cream
  • 1 tsp pumpkin spice mix* (see recipe below)
  • 1 tsp red pepper flakes (if you like spice, I would go up to 2 tsp – if you have spice-adverse people, omit or use 1/2 tsp)
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • maple syrup (optional)

What you do:

  • In your Staub 3.5L Pumpkin Cocotte (seriously, how cute is this?), over medium-high heat, add the pumpkin puree, stock, cream, pumpkin spice mix, salt, pepper and red pepper flakes

  • Whisk

  • Bring to a boil, whisking
  • Reduce heat to medium-low
  • Simmer about 5 minutes, whisking

Pumpkin Spice Mix:

What you need:

  • 3 tbsp cinnamon
  • 1 tbsp ginger
  • 2 tsp nutmeg
  • 1 tsp ground cloves
  • 1 tsp ground allspice

What you do:

  • Mix together
  • Store in an air tight jar

A fast dinner soup, that is pretty stick-to-the-ribs hearty and a snap to whip up. This recipe is extremely easy to double if you are feeding a bigger crowd.

Ingredients

  • 1 - 796ml can pumpkin puree
  • 5 cups stock (chicken or vegetable)
  • 1 cup 35% whipping cream
  • 1 tsp pumpkin spice mix* (see recipe below)
  • 1 tsp red pepper flakes (if you like spice, I would go up to 2 tsp, if you have spice-adverse people, omit or use 1/2 tsp))
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • maple syrup (optional)

Instructions

  1. In your Staub 3.3L Pumpkin Cocotte (seriously, how cute is this?), over medium-high heat, add the pumpkin puree, stock, cream, pumpkin spice mix, salt, pepper, and red pepper flakes
  2. Stir
  3. Bring to a boil, whisking
  4. Reduce heat to medium-low
  5. Simmer about 5 minutes, whisking
  6. Taste, adjust salt & pepper
  7. Serve in adorable Staub mini Pumpkin Cocotte "bowls"
  8. Optional: Drizzle with maple syrup (I liked the maple syrup with it, one of our tasters preferred it without)

Notes

To make the Pumpkin Spice Mix - mix together


  1. 3 tbsp cinnamon
  2. 1 tbsp ginger
  3. 2 tsp nutmeg
  4. 1 tsp ground cloves
  5. 1 tsp ground allspice

Store in an airtight jar.
