I love chickpeas. I might have mentioned this before (insert eye roll). Now that I know that I can whip up some chickpeas from dried in my Instant Pot in a little more than an hour, these crunchy spiced chickpeas have become one of my go-to snacks. They are super-easy and quick to make and you can eat them knowing that they’re good for you!
While this crunchy, healthy snack is full of fibre, zinc, folate and protein, what you’ll notice is the addictive lightly spiced taste! These crispy bites are not only vegetarian, they are also vegan and good for celiacs and people who are following a gluten-free diet. My sister Louise loves these – I know what I’m making when she comes to visit!
I love spicy food, but you can play around with your seasonings to give you whatever flavour combination you like. Chickpeas are a blank slate for spices. What flavours do you like? Mix them up and experiment! The recipe can easily be doubled, tripled etc. if you want to make a larger batch.
Prep time: 2 minutes; Cook time: 30 – 40 minutes; Serves: 1 – 2
What you need:
- 1 cup cooked chickpeas (cooked from dry)
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp chili powder
- 1/4 tsp salt
- 1 tsp lemon zest (about half a lemon)
What you do:
- Preheat your oven to 400°F
- Blot your chickpeas dry
- In a bowl, add the chickpeas and the olive oil
- Add the garlic powder, chili powder, salt and lemon zest
- Toss to coat
- Spread on a baking sheet
- Bake for 30 – 40 minutes until crunchy
- Serve
- Enjoy!
