I love that grilled middle eastern chicken (or beef) on an upright rotisserie that is slightly crispy and is served with (I think) all my favourite condiments.
Have guests with special dietary needs? This is a dish for you to Pin. It’s fast, fresh, gluten-free and appropriate for celiacs or those practicing gluten-reduced diets.
How much do I love this? It’s a healthy, quick, leftover reboot, good for students. Oh, and did I mention easy?
Chicken Shawarma! Crispy spiced chicken, cool toppings, easy to make and throw together. Yum! Oh yes, and I’m loving the leftovers! I’ve even rebooted them as a wrap.
Chicken Shawarma Bowl Assembly:
Prep time: 5 minutes; Serves: 4
What you need:
- 1 lb cooked shawarma spiced chicken (see below)
- 1 cup cooked cumin rice (add 1 tsp cumin to your rice)
- 1 cup hummus (3 tbsp per serving)
- ½ cucumber, sliced and quartered
- Grape tomatoes, sliced in half (I used 4 per person)
- Pepperoncini (or hot peppers)
- Pickles
- Pickled Onions
- Lebanese Coleslaw
- Yogurt Lemon Garlic Dip (2 tbsp per serving)
What you do:
- In a bowl add your rice, hummus, cucumber, tomatoes, pepperoncini pickles, cabbage salad and chicken
- Add the Yogurt Lemon Garlic Dip on the side, or drizzle over
- Enjoy!
- Healthy!

Chicken Spiced Shawarma
Prep time: 5 minutes + 15 minutes marinate time; Cook time: 20 minutes; Serves: 4
What you need:
- 1 lb boneless skinless chicken thighs, cut into 1” pieces
- Shawarma Spice Mix (see below)
- 3 tbsp Olive oil
- Cooking spray
What you do:
- Pre-heat oven to 400F
- Mix shawarma spice mix and olive oil, add to chicken, mix well, set aside for 15 – 30 minutes
- Spread chicken on a baking sheet lined with aluminum foil and sprayed with cooking spray
- Bake for 15 minutes
- Turn oven to broil, broil for 5 minutes to get crispy
Shawarma Spice Mix:
Prep time: 2 minutes
What you need:
- 2 tsp cumin
- 1 tsp coriander ground
- 1 ¼ tsp sweet paprika
- ¾ tsp cayenne (or hot paprika) pepper
- 1 ½ tsp garlic powder
- ½ tsp salt
- ½ tsp pepper
- 1 tsp turmeric
- 1 tsp cinnamon
What you do:
