I have a confession, I have never met a potato I didn’t like! Maybe it’s from being half Irish on my mother’s side. Who doesn’t like potatoes? I love potato chips, Tuesday, March 14 is National Potato Chip Day. What?! National Potato Chip Day?!!! Yes! This is a day that I can totally get behind!
While potato chips have a bit of a bad rap for being unhealthy, this version is baked in the oven using real potatoes. It’s easy to prepare and you can feel smug knowing that you are supporting National Potato Chip Day in a slightly healthier way. Kids love these baked chips and students, this is an easy recipe for you!
This is a great recipe to keep in your back pocket and whip up when you have friends over. The blue cheese dip is versatile and you can also serve it on crostinis with leftover Flank Steak for appetizers.
Baked Potato Chips
Prep time: 10 minutes, Cook Time: 25 minutes; Serves: 4 – 6 people
What you need:
- 3 baking potatoes
- 1/4 cup olive oil
- 1 tbsp garlic powder
- freshly ground pepper
What you do:
- Preheat oven to 425°F
- Slice potatoes to 1/8″, try to keep the slices as even as possible
- Place in a bowl
- Add olive oil
- Add garlic powder
- Add pepper
- Toss to coat
- Arrange on 2 rimmed baking sheets in a single layer, don’t crowd them
- Place in oven
- Cook for 15 minutes, flip over
- Cook for 10 minutes
- Serve with blue cheese dip, recipe below
Blue Cheese Dip
Prep time: 5 minutes, Chill Time: 30+ minutes; Serves: 4 – 6 people
What you need:
- 1/4 cup low fat mayonnaise
- 1/4 cup low fat sour cream
- 1/4 cup blue cheese, crumbled
- 1/2 tsp garlic powder
- 10 chives, chopped
- pepper
What you do:
- Add mayonnaise and sour cream to a bowl
- Add garlic powder
- Add chopped chives
- Add blue cheese
- Stir well
- Add pepper
- Stir and chill for 1/2 hour plus
- Blue cheese dip is also excellent served on flank steak
