I’ll let you in on a secret. I’m not a big dessert or chocolate person. I mean if you order dessert, I’ll have a bite, or maybe two, but on the whole, I can eat dinner and pass on dessert. (That being said, I never met a potato chip or french fry that I didn’t like….)
Now I know that this is unusual. Most people will either “save room” for dessert or even look at the dessert menu first to see what they are going to eat after dinner. When I have people over for dinner, I try to make sure that I have something for dessert. Many a meal has ended with Prairie Girl cupcakes because not only are they are totally cute, they are on my way home from work.
I like this recipe because it is super easy, super fast, only needs a few ingredients and you can whip it up, stick it in the fridge and make dinner. This is a winner: “she shoots, she SKORS” .
Prep time: 15 minutes, Chill time: 1+ hour, Serves: 8
What you need:
- 1 cup semi-sweet chocolate chips
- 2 cups whipping cream
- 1/2 cup ricotta
- 1/4 cup SKOR bits
What you do:
- In a microwaveable bowl, place the chocolate chips and cover, place in the microwave and cook on HIGH for 2 minutes, remove and stir to melt chips
- While you are microwaving the chocolate chips, in a large bowl, whip the whipping cream until soft peaks form, about 2 minutes
- With a spatula, fold the melted chocolate into the whipped cream to incorporate
- Add the ricotta and stir in (it may be a little lumpy, so you can also whip it in) until smooth
- Spoon into ramekin dishes
- Top with SKOR bits
- Refrigerate 1 hour or more
- Serve and look like you have been slaving all day on dessert
Variations:
- Omit SKOR bits and serve as chocolate mousse
- Substitute white chocolate chips and top with fresh raspberries and mint
- Top with Royal Raspberry Sauce
- Add 1 oz Espresso to the melted chocolate chips for a Mocha Mousse
- Add 1 oz Frangelico to the melted chocolate chips for a Hazelnut Mousse
- Add fresh chopped strawberries to the chocolate mousse instead of SKOR bits
- Add fresh chopped cherries to the chocolate mousse instead of SKOR bits
- Add 1/2 cup chocolate chips + 1/2 cup peanut butter chips for a Reese’s twist
- Add 1 oz of White Creme du Menthe to the chocolate chips
- Substitute white chocolate chips and add 2 oz Green Creme du Menthe for the chocolate for a green dessert
